Can You Freeze Dinner Rolls?

Yes, even though these are quick dinner rolls, I still freeze them to save time. You can freeze them already made, but I prefer to freeze the dough.

How to Get Brown on Top of Rolls

I brush the tops with water, milk, or melted butter before baking. This is optional, but it gives the rolls a nice a nice golden top.

You can also sprinkle some sea salt on the top if you want.

The Best Pan for Dinner Rolls

You can use an 8x8 pan, 9 inch round, or a 9x13 pan. If you want free form rolls, use a cookie sheet.
Any size pan is fine. A smaller pan will yield a higher roll. These don't raise a lot since they are quick dinner rolls, so I use either a 9x13 or a cookie sheet to bake my rolls in.

I used my cast iron pie panEasy Weeknight Dinner Roll Recipe Quick Using Kitchenaid Mixer (5), and they turned out amazing. I highly recommend using cast iron or a stone pan if possible.

Flour

You can use bread flourEasy Weeknight Dinner Roll Recipe Quick Using Kitchenaid Mixer (7) or all purpose flour to make these quick dinner rolls. I use half and half with great results.

You can substitute up to half of the flour with white whole wheat flour or whole wheat flour. I recommend keeping it around 1/4 of the flour for best taste.

Tips for Making Quick Dinner Rolls

It's important to use 105 to 110 degree water to activate the yeast. It's best to proof yeast at 95 degrees, but you really need the higher temperature to active the yeast.

When it's time to raise the dough, you want it between 80 and 90 degrees. If your kitchen is cooler than that, and it most likely is, set the pan on top of the stove while the stove preheats and cover with a towel to trap in heat and moisture.

Check on the rolls after 8 minutes. If they are browning too quickly, cover with aluminum foil. If you see that they aren't baking evenly, turn the pan.

The best way to ensure even baking is by making the rolls the same size. It's best to weigh the dough with a kitchen scaleEasy Weeknight Dinner Roll Recipe Quick Using Kitchenaid Mixer (9) and divide by 12. Then make each roll that size.

When you form the ball, pinch the seam and place that on the bottom. This helps the top and sides look smooth.

FAQs

How long to knead bread dough in KitchenAid mixer? ›

Remove your flat beater and attached your dough hook, and knead the dough for 5 minutes on low speed (1 & 2). Always ensure that you knead on low speed so as not to overheat the motor.

Why are my homemade dinner rolls hard? ›

Too much flour, or not the right kind, could be to blame. Dough made only from flour with a high or even average amount of protein (like bread flour or all-purpose flour) can become tough from overmixing. Protein gives bread structure in the form of gluten—the more you mix and move the dough, the more gluten you get.

How do you spruce up store bought dinner rolls? ›

Try sprinkling herbs over the warmed rolls, or cracking some salt over them. One of our favourite ways to uplift a store-bought dinner roll is to drizzle some olive oil over them for instant Mediterranean flair!

What speed do you need bread in a KitchenAid mixer? ›

For best results, you should only use speed 2. Using a lower speed won't provide enough momentum to knead the dough properly, and a higher speed may quickly overwork the dough.

Can you knead your dough too much with a stand mixer? ›

It's hard to over-knead dough by hand, but easy to do so by machine. Over-kneaded dough will be dense and rip easily, baking into a dense and flat loaf. If over-kneaded, you'll want to start over.

How do you make homemade rolls less dense? ›

Don't rush the rising time.

For flavor and texture, these fluffy dinner rolls need an initial rise and then a second proof after they're shaped. This ensures that your rolls are light and fluffy and not dense bricks.

Why are my rolls dense and not fluffy? ›

Too much flour, or not the right kind, could be to blame. Dough made only from flour with a high or even average amount of protein (like bread flour or all-purpose flour) can become tough from overmixing. Protein gives bread structure in the form of gluten—the more you mix and move the dough, the more gluten you get.

Should you brush dinner rolls before baking? ›

Butter basting: Rolls can be brushed with butter before, during, or after baking. While it doesn't brown the surface as much as egg wash will, it does promote browning and adds a lot of flavor.

Should homemade dinner rolls be refrigerated? ›

Room Temperature:Freshly baked rolls can stay soft and delicious for about 1 to 2 days when stored at room temperature. After this time, they may start to dry out and lose their freshness. Refrigeration:If you want to extend the freshness of homemade rolls, you can store them in the refrigerator.

What kind of pan is best for baking rolls? ›

If you don't have a large 11 inch cast iron pan, you can use a glass baking dish sprayed with nonstick spray. A 9×13 size would work well. It's best to have the rolls all touching each other when you arrange them in the pan, and I'll tell you why…

What is the difference between dinner rolls and buns? ›

Rolls are typically proofed and baked closer together for a softer, “pull apart” result. This makes them great for dipping or eating alongside other food. On the other hand, buns are proofed with space between them, which makes them crustier.

What happens if you add too much flour to dinner rolls? ›

Too much flour results in a dry, crumbly dough that's unpleasant and difficult to work with. It doesn't stick to itself and tends to fall apart when kneaded.

How do you know when bread is kneaded enough? ›

The Poke Test – Give that ball of dough a firm poke with your finger. If the indentation fills back quickly, you're good to go. If it stays looking like a deep dimple, continue kneading.

How long should bread dough be mixed in a mixer? ›

1. HOW LONG SHOULD I KNEAD BREAD DOUGH IN A KITCHENAID® MIXER? Mix bread dough for no more than 2 minutes and then, depending on the recipe, knead for 2–4 minutes. Make sure you avoid over-kneading by adapting the hand-kneading time required in your favourite recipes.

How do you know if dough is over kneaded? ›

The dough will be easy to stretch, have an elastic-like feel and bounce back when touched. Overworking or over-kneading dough is quite common when using a stand mixer. Because stand mixers produce faster results, it's easy to overdo it. The overworked dough will often feel tight and tough.
