My family had this sausage and egg breakfast casserole at the lake one weekend for breakfast with muffins, fruit, and a cinnamon roll casserole. There was plenty of food there that morning to eat. I thought that this would be a great recipe to share with everyone. The perfect recipe for making at the lake this weekend or Easter Brunch!

This is also great as leftovers the next morning. Just reheat it in the microwave.

Ingredients Needed

5 Ingredient Sausage Hash Brown Casserole - Recipe Diaries (2)
  • Hot breakfast sausage - I used Jimmy Dean Fully cooked turkey sausage crumbles (1 ½ cups). Since the sausage is fully cooked already just you don't need to heat it up in the pan for very long. It will cook in the casserole dish.
  • Bag frozen shredded hash browns - Frozen shredded hash browns are a convenient and versatile ingredient for many recipes. They can be used as a base for breakfast dishes such as hash browns or as a side dish for lunch or dinner. Can also use the hash browns that come in the refrigerator section at the grocery store.
  • Shredded cheddar cheese - use whatever type of cheese in your pantry or mix up different kinds of shredded cheese. Use reduced cheese or fat-free if you want to lower the calories.
  • Eggs - The best type of eggs you can buy at the store are organic or free-range eggs, while others may prefer eggs from specific breeds of chickens
  • Milk - Dairy does not like me at all so I go for a lactose free milk such as Fairlife. It also has more protein in it.
  • Salt and pepper - to taste

What to serve with Sausage and Egg Hash Brown Casserole?

One great side dish to serve with Sausage and Egg Hash Brown Casserole is fresh fruit. A fruit and yogurt parfait would be a great addition or a bowl of mixed berries or sliced melon can provide a refreshing contrast to the savory flavors of the casserole. You could also serve a side of toast or English muffins, which can be used to sop up any leftover egg yolks or sausage gravy.

If you’re looking for something a little more substantial, consider adding some roasted vegetables to your meal. Roasted asparagus, broccoli or Brussels sprouts would all be great choices. You could also serve a simple green salad with a light vinaigrette dressing.

Finally, if you want to keep things simple, just serve the casserole on its own. With its combination of protein, carbs and veggies, it’s a satisfying and complete meal all on its own.

Recipe FAQS

What if I didn't defrost my hash browns?

There are two different methods you can use to make this casserole. One is by following the directions below. This is the directions for "Oops, I forgot to defrost my hash browns overnight method." Cook them on the stove for a bit and heat them through. The hash browns do not need to be browned, they just need to be warmed up.

Should I defrost my hash browns over night?

The other method is to have the hash browns completely defrosted before making this. It can be made ahead of time this way. Just make sure to have the sausage cooked ahead of time so all you have to do is assemble the casserole in the morning and pop it in the oven.

Do I need to cover my casserole dish?

It depends on what you are cooking. If you want to prevent the top layer from getting too brown, you can cover the casserole dish with foil or a lid. If you want the top to be crispy, leave it uncovered. Additionally, covering the dish can also help the food cook evenly and retain moisture.

How do I store leftovers?

Always store leftovers in clean, food-grade containers. The type of container doesn’t really matter. Use zip lock, glass, plastic, whatever! Make sure to store any leftovers in an airtight container.

Another way you can make this is to defrost the hash browns completely and make sure the sausage is cooked prior to making this. Then add everything to a bowl and pour it in the casserole dish.

FAQs

Why is my hash brown casserole soggy? ›

Frozen hash browns will leak moisture during cooking, which could leave a soggy, sad mess behind. For the best results, let the frozen hash browns thaw overnight in the fridge, then thoroughly pat them dry to remove as much moisture as possible before cooking them to crispy.

What will prevent the hash browns from becoming crispy? ›

You'll want to remove as much moisture as possible because this will prevent your hash browns from getting as crisp as possible. All the water will just create steam and as any additional starch is released from the potato it's going to get gummy, just not as gummy as before. So get them dry!

How do you thicken a hash brown casserole? ›

Whisk together equal parts cornstarch and cold water in a small bowl. Use one tablespoon of cornstarch per cup of liquid you would like to thicken. Stir out all the lumps. A few minutes before your casserole is done, add it a little at a time until you are happy with the thickness.

What seasoning is good on hash browns? ›

Sprinkle shredded potatoes into hot butter in an even layer; season with cayenne pepper, paprika, salt, and black pepper. Cook potatoes until a brown crust forms on the bottom, about 5 minutes. Flip or stir and continue to cook until potatoes are browned and crusty all over, about 5 more minutes.

How do you fix a soggy casserole? ›

Just because your casserole is starting to look a bit soupy doesn't mean it's beyond saving. In fact, all you need to do is add some pasta noodles or grains to your base. This trick works for the simple reason that both types of ingredients soak up water as they cook.

How do you make a casserole not soggy? ›

To prevent a soupy casserole, be sure to fully thaw any frozen vegetables in a colander over a bowl, and pat dry, squeeze excess moisture out of greens like spinach or chard, and quickly precook watery fresh vegetables like onions, mushrooms or squashes just until they release their moisture.

Why is my breakfast casserole watery? ›

This is often due to high water content in some vegetables and dense meats that are used in these dishes. Browning /cooking the meats (and draining off any excess liquid) and sautéing the vegetables before cooking often helps this issue.

Why is my potato casserole runny? ›

My sauce is watery

If you stored your potatoes in water to prevent discoloring, be sure to drain them well and pat them dry before adding to your casserole. Some of the waxier potatoes can release more water than starchier ones, so look for good baking potatoes like russet or Yukon golds.
