Brussels sprouts are probably a veggie that your parents tried to get you to eat as a kid, but you would hide them under napkins, feed them to the dog, or stuff them in your pocket to dispose of later, just to avoid eating them.

All kids have been there. But now, as adults, I am sure you will love them just as much as I do! I have many favorite Brussels sprout recipes, and this is one of them!

Ingredients:

  • 1 pound Brussels sprouts
  • 1 Tbsp olive oil
  • 2 Tbsp balsamic vinegar
  • Black pepper
  • Garlic powder
  • Sea salt

Directions:

1. Preheat the oven to 400 degrees.
2. Cut the ends off of the Brussels sprouts and cut them in half.
3. Place them on a cooking sheet that is lined with foil and coat them with the olive oil and balsamic vinegar.
4. Sprinkle black pepper, garlic powder, and sea salt on top of the Brussels sprouts.
5. Bake them until the edges are brown and crisp.

Enjoy! These are tasty, simple, and perfect as a side dish or a snack! Make a bunch and enjoy some leftovers at work as well.

One of the main benefits of Brussels sprouts is that they are packed full of nutrients that can help boost your health! Half a cup of Brussels sprouts include:

  • Vitamin A – 12% of the RDI
  • Vitamin C – 81% of RDI
  • Vitamin K – 137% of the RDI
  • Manganese – 9% of the RDI
  • Fiber – 2 grams
  • Protein – 2 grams

These are a few of the main nutrients found in this mighty little veggie!

High in Fiber

The fiber found in Brussels sprouts can help boost digestive health. When you eat Brussels sprouts, they introduce healthy bacteria to your gut. Getting more fiber in your diet can also help reduce the risk of heart disease and improve blood sugar levels.

High in Vitamin K

Vitamin K is not one that many people hear about. What are the benefits of vitamin K? Great question! It may play a huge role in bone growth and can help protect against osteoporosis.

High in Vitamin C

This vitamin is an important antioxidant that can help with immune health, collagen production, repair and growth of tissue, and iron absorption.

Help Protect Against Cancer

Brussels sprouts have been shown to help protect against cancer, which makes this vegetable even better! Brussels sprouts are high in antioxidants, which allow them to fight free radical damage. But they also can provide special nutrients that help with three different body systems, including the detox system, the antioxidant system, and the inflammatory or anti-inflammatory system. All of these systems are closely connected to cancer development. So, since Brussels sprouts support these systems, the body is better protected against cancer.

Brussels sprouts are full of nutrients that can offer many different benefits. These are only a few of the benefits that I think are super important and fun to know! Eating healthy can be easier and more enjoyable when you know what your body is getting out of it! But I also love Brussels sprouts and this recipe makes them yummy and is super quick and easy.
